I've been here 10 years now.
so before I worked for some very traditional restaurants at the beginning of my career
to 5-star hotels.
In 1989, I came to London longtime ago, I still have my French accent
and I worked for Richard Branson, you know, at the Roof Gardens
At Le Cordon Bleu we teach throughdemonstrations so all of our students
will have first-hand experience ofwatching a chef and then we break them
into small groups to go into practicalclasses.
Here we got one teacher
for a class of 16
so this allow us to really see everything.
We never miss anything.
We, as lecturers and instructors, liaise with
professionals ranging from 5 stars chefsto marketing professionals.

It's not the same as reading abook or watching a video you have
interactions with the students all thetime
It's true that, you know, at the Le Cordon Bleu we teach the foundations
that have been used for years and years.
Once they know all the rules of the classical techniques,
they can obviously learn how to maybe break the rules and be as creative as they can be.
The internship is a perfect platformfor any student to gain
that extra exposure to the industry.
I think students come here for the same reason than I did
because it's the best.
